Button mushroom and buckwheat salad

To make the salad, you will need:

  • 400 g button mushrooms;
  • 150 g uncooked buckwheat;
  • 150 g lettuce leaves;
  • 100 g nuts;
  • Oil for sautéing.

For the hemp seed dressing:

  • 2 Tbsp. hemp seeds;
  • 1 garlic clove;
  • Juice of 1/2 a lemon;
  • Salt;
  • 50 mL oil;
  • Water to adjust the consistency of the dressing.

PREPARATION:

  • Soak the nuts. Boil the buckwheat, keep warm. Heat the oil in a skillet and sauté the button mushrooms quickly and thoroughly. 
  • Mash the hemp seed kernels with the garlic, salt, and lemon juice. At the end, add the oil and dilute with water to reach the desired consistency. 
  • Arrange the lettuce leaves, buckwheat, mushrooms, and nuts on a plate and cover with the dressing. .
