To make the courgette pasta, you will need:
- 1 young courgette;
- 100 g button mushrooms.
For the button mushroom marinade:
- 3 Tbsp. olive oil;
- 1/2 tsp. salt;
- Pinch of pepper;
- 1 tsp. agave syrup;
- 1 tsp. apple cider vinegar;
- Pinch of smoked paprika powder;
- 1 garlic clove, minced.
For the cashew sauce:
- 1 c. cashew nuts, soaked overnight;
- 1 garlic clove;
- 1 tsp. mustard;
- Pinch of salt, pepper;
- 1 Tbsp. lemon juice;
- 100 mL water;
- 50 g baby plum tomatoes.
PREPARATION:
- Cut the courgette with a spiralizer.
- Combine the ingredients for the button mushroom marinade and mix well. Marinate the button mushrooms in the prepared marinade for at least 15 minutes.
- Place the ingredients for the cashew sauce in a blender and blend until smooth.
- Serve the courgette pasta mixed with marinated button mushrooms and the baby plum tomatoes. Cover with the cashew sauce.
