Courgette pasta

Servings: 2–3

To make the courgette pasta, you will need:

  • 1 young courgette;
  • 100 g button mushrooms.

For the button mushroom marinade:

  • 3 Tbsp. olive oil;
  • 1/2 tsp. salt;
  • Pinch of pepper;
  • 1 tsp. agave syrup;
  • 1 tsp. apple cider vinegar;
  • Pinch of smoked paprika powder;
  • 1 garlic clove, minced.

For the cashew sauce:

  • 1 c. cashew nuts, soaked overnight;
  • 1 garlic clove;
  • 1 tsp. mustard;
  • Pinch of salt, pepper;
  • 1 Tbsp. lemon juice;
  • 100 mL water;
  • 50 g baby plum tomatoes.

PREPARATION:

  • Cut the courgette with a spiralizer.
  • Combine the ingredients for the button mushroom marinade and mix well. Marinate the button mushrooms in the prepared marinade for at least 15 minutes.
  • Place the ingredients for the cashew sauce in a blender and blend until smooth.
  • Serve the courgette pasta mixed with marinated button mushrooms and the baby plum tomatoes. Cover with the cashew sauce.
