To make the lentil tacos, you will need:
- 1 Tbsp. oil (for sautéing);
- 1/2 onion;
- 1 garlic clove;
- 1 handful cooked lentils;
- Pinch of cumin;
- Pinch of salt;
- 1/2 c. vegetable broth;
- 1/2 avocado;
- 1 tomato;
- 1/2 jalapeño pepper;
- 1 handful coriander leaves;
- 1 Tbsp. lime juice;
- 2 wheat tortillas;
- Pinch of salt.
PREPARATION:
- Heat the oil and sauté the chopped onion and garlic. Add the cooked lentils, season with spices, and add the broth. Boil for about 4–5 minutes and then purée everything with an immersion blender.
- Cut the avocado and tomato into cubes. Finely chop the jalapeño pepper and coriander leaves and mix with the tomato and avocado. Season with salt and lime juice.
- Warm the tortillas. Spread the lentil mixture on them and add the chopped vegetables. Season and garnish with coriander leaves.
