Crispy aubergine fingers

Recipe serves 2-4
Preparation time: About 30 min.

To make the aubergine fingers, you will need:

  • 1 medium aubergine;
  • Pinch of salt and pepper mixture;
  • 1 egg;
  • 2 Tbsp. soy sauce; 
  • 1 garlic clove;
  • 4-5 Tbsp. flour;
  • 100 g breadcrumbs; 
  • 1 Tbsp. organic raw cane sugar;
  • 500 mL Napoletana Italian-style Sauce;
  • Oil (for frying);
  • Basil leaves (for garnish).


  • Wash and dry the aubergine. Cutting lengthwise along the entire aubergine, make thick sticks. Sprinkle with the salt and pepper mixture. You can rub it in for better absorption.
  • Crack the egg in a bowl, add the soy sauce, grate in the garlic, and beat well with a fork.
  • Pat the aubergine sticks dry with a paper towel and roll them in flour. Then soak them in the egg mixture.
  • Put the breadcrumbs and raw cane sugar in a separate bowl and mix. Roll the aubergine sticks in this mixture. 
  • Pour the Kėdainių Konservai Napoletana Italian-style Sauce into a saucepan and heat.
  • Heat the oil in a frying pan and add the aubergine sticks. Fry until they are nicely browned and golden.
  • Serve the aubergine sticks immediately with the warm sauce. You can garnish them with basil leaves.
